With the coming of spring I decided to get back to a healthier eating with more natural products. However, sweet cravings often stop me from doing so. If you are like me and cannot suppress those sugar cravings completely (and I think you shouldn’t!), then I have something for you. Today I decided to try out this raw cake using only natural, plant based products.
The holy grail for this cake is coconut oil. Not only has it got numerous benefits, but it also works wonders for making cakes! It is the ingredient that makes your cake ‘frosting’ harden. As far as its health benefits are concerned, it plays a major role in the weight lose game. It increases fat burn, boosts metabolism and reduces appetite.
The main ingredient for the base is dates. They give that sweet taste, while being full of fiber. Did you know that dates contain all types of essential nutrients including minerals and vitamins? This makes them good for prevention of various diseases and they also boost energy levels.
In addition to these two, you can use pretty much whatever you like. In the base you can put all kinds of nuts and dry foods, stevia, cocoa or vanilla. For the frosting you shall need something that gets creamy, e.g. avocado, bananas, almond paste. Again you can add different flavors and sweeteners.
Bottom line: such a raw cake is super easy to make, you can easily experiment with flavors and it is super healthy. Raw cakes are suitable for vegans, or just anyone that needs a healthy substitute to regular sweets.
Chop together the dates, nuts, coconut oil and papaya in a kitchen robot. Layer onto the bottom of your pan (I used a 9 inch one, but the cake came out too thin; I would suggest using smaller pans) and let cool in the fridge.
For the creme
Blend the bananas with cocoa and honey. Add the coconut oil until well absorbed. Pour onto the cooled base and let sit in the fridge for a couple of hours.
