Chocolate Chip Oat Cookies

  • 2 cups oats (finely chopped to flour)
  • 1 teaspoon cinnamon (or to taste)
  • 1-2 teaspoon flaxseed
  • 1/2 teaspoon baking powder
  • pinch of salt
  • 1/2 cup coconut oil (melted)
  • 3 tablespoons raw honey (or to taste)
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 2-3 tablespoons oat milk
  • Dark chocolate chips (to taste)


Step 1
Preheat oven to 180 °C. Chop the oats, so you get oat flour and mix all the dry ingredients together in a bowl.
Step 2
Add in the melted coconut oil, the honey, then the vanilla extract and crack the eggs. Put in the milk and if the consistency is too thick, add a little more. Finally, stir in the chocolate chips (or chocolate chunks). You can also put some walnuts (or any nuts) for extra crunchiness.
Step 3
Make small balls of the batter and place on a slighlty greased baking tray. Press the balls on top to make them flat. Note that the mixture might be very sticky, so you might need to wash your hands every once in a while.
Step 4
Bake for 20 minuted or untill ready. Serve cooled with tea/coffee or just as a snack.
