Biscuit cake is a traditional dessert here in Bulgaria, plus it is super easy and tasty! It can be done in 20-30 minutes, so it’s the perfect recipe when on the go!
What is great about this recipe is that you have plenty of options when it comes to flavour and etc. For example, the cake that I made was with cocoa-vanilla pudding creme. I sometimes make it with sour cream and fruit jam, however. It is up to you and you can choose from a variety of tastes.
The biscuit cake is very light, and it is also no bake. You just need to prepare the creme first and then put it in the fridge. Mine was with 3 layers, but depending on the size and type of your cake pan you can switch things up. I placed the biscuits on top of one another, but if your are in circular form you might want to crush them.
First I wanted to make two separate cremes – one vanilla and one cocoa. Since I was in a hurry, I went for a combination of both. Alternative – I’d rather do it myself, but if you are really short on time you can buy one of Dr. Oetker’s cremes, like these:
Another optional thing – the walnuts on top. You can switch them for coconut flakes or ground biscuits, or if your cake is with sour cream you can put jam. As you can see it pretty much depends on one’s taste, and that’s why this recipe is so good!
Vanilla Cocoa Biscuit Cake

- 750ml milk
- 200g granulated sugar
- 2 eggs
- 3 tablespoons all-purpose flour
- Vanilla extract
- 1 tablespoon unsweetened cocoa powder
- 600g regular biscuits
- 200ml milk
- Walnuts (optional)
|For the creme|
|Bring the milk (750 ml) to a boil. Add the sugar and stir until it dissolves.|
|In a bowl whisk the eggs with the flour. Add the vanilla extract and the cocoa. Stir until there are no lumps.|
|Add the flour and egg mixture into the milk, and put over low heat. Stir gently until the consistency becomes more dense.|
|For the cake|
|Dip every biscuit in milk before putting it in the cake pan. When one layer is ready, top it with the creme and then repeat. Sprinkle walnuts on top. Let it chill for 2-3 hours.|
