Who doesn´t love sweet, gooey chocolate chip oat cookies?! I have been putting off making some kind of a healthy dessert for so long now! So, I decided it was high time I did it. This recipe is super easy and is perfect for when you want to satisfy your sweet tooth without overindulging in refined sugars and processed foods.
What is also great about it is that it can be easily adapted for a vegan or gluten-free diet. For example, the oat flour can be swapped for almond or coconut one. Similarly, the egg can be substituted by flax-egg . As far as the chocolate or chocolate chips go, you can simply use vegan ones. Another thing I used is honey, instead of which you can use rice malt syrup or maple syrup.
Now, let´s talk a bit about some of the ingredients and why these chocolate chip oat cookies are actually good for the body. Firstly, the cookies are super nutritious and rich in fibers, which ´clean´ your gastrointestinal tract. They come from the oats, which are the main ingredient obviously. But also from the flax seed which I put, too. I always add it to smoothies with chia seeds, for example, to get that extra Omega-3 fatty acids. Another special ingredient is cinnamon. This widely used spice fights inflammation and is rich in antioxidants. Therefore, it is amazing for healthy, glowing skin (but not only, of course).
Speaking of antioxidants, here comes the star of the show – dark chocolate. It is extremely nutritious as well, but make sure you get as higher percentage of cocoa as possible.
The best part about the cookies, in my opinion, is that you literally throw all the ingredients in a bowl, mix them and then make gooey balls of goodness in 10-15 minutes. Baking time is also in this range, depending on your oven.

Note: I don´t always measure precisely the amounts of ingredients, I usually put how much I think is enough, so these are a rough estimate. You can always switch things up.
Chocolate Chip Oat Cookies

- 2 cups oats (finely chopped to flour)
- 1 teaspoon cinnamon (or to taste)
- 1-2 teaspoon flaxseed
- 1/2 teaspoon baking powder
- pinch of salt
- 1/2 cup coconut oil (melted)
- 3 tablespoons raw honey (or to taste)
- 2 eggs
- 1/2 teaspoon vanilla extract
- 2-3 tablespoons oat milk
- Dark chocolate chips (to taste)
|Preheat oven to 180 °C. Chop the oats, so you get oat flour and mix all the dry ingredients together in a bowl.|
|Add in the melted coconut oil, the honey, then the vanilla extract and crack the eggs. Put in the milk and if the consistency is too thick, add a little more. Finally, stir in the chocolate chips (or chocolate chunks). You can also put some walnuts (or any nuts) for extra crunchiness.|
|Make small balls of the batter and place on a slighlty greased baking tray. Press the balls on top to make them flat. Note that the mixture might be very sticky, so you might need to wash your hands every once in a while.|
|Bake for 20 minuted or untill ready. Serve cooled with tea/coffee or just as a snack.|
