Biscuit cake is a traditional dessert here in Bulgaria, plus it is super easy and tasty! It can be done in 20-30 minutes, so it’s the perfect recipe when on the go!
What is great about this recipe is that you have plenty of options when it comes to flavour and etc. For example, the cake that I made was with cocoa-vanilla pudding creme. I sometimes make it with sour cream and fruit jam, however. It is up to you and you can choose from a variety of tastes.
The biscuit cake is very light, and it is also no bake. You just need to prepare the creme first and then put it in the fridge. Mine was with 3 layers, but depending on the size and type of your cake pan you can switch things up. I placed the biscuits on top of one another, but if your are in circular form you might want to crush them.
First I wanted to make two separate cremes – one vanilla and one cocoa. Since I was in a hurry, I went for a combination of both. Alternative – I’d rather do it myself, but if you are really short on time you can buy one of Dr. Oetker’s cremes, like these:
Another optional thing – the walnuts on top. You can switch them for coconut flakes or ground biscuits, or if your cake is with sour cream you can put jam. As you can see it pretty much depends on one’s taste, and that’s why this recipe is so good!
